IMPACT OF EDUCATIONAL CAMPAIGNS TO REDUCE FOOD WASTE IN FOOD AND NUTRITION UNITS.

Introduction: Food waste is a problem of great relevance in contemporary society and should be avoided through proper planning in order to avoid excess production and consequently leftovers. Awareness campaigns for diners and periodic training of employees are relevant and impactful strategies in the fight against food waste in food and nutrition units (FNUs). Objective: To analyze the impact of educational campaigns to reduce food waste in FNUs. Materials and Methods: This is a literature review study of articles published in Lilacs, Medline and Scielo Electronic Databases between 2011 and 2020, using the descriptors: food waste, collective feeding, environmental management and training in service. After searching the databases, 52 studies were identified, 44 being excluded after the inclusion and exclusion criteria, resulting in 8 studies. Results and Discussion: The studies showed that educational campaigns against food waste carried out with diners and employees of the FNUs will provide a reduction in daily rest-intake, and these educational interventions should be carried out continuously. Conclusion: It is concluded that the continuous practice of awareness of diners, in the sense of serving themselves only what they will consume, and also maintaining regular training of FNU employees so that they produce just enough food are essential measures that can help in improving the costs and organization of the FNU.
